Favorite Soup Recipes

With winter right around the corner, it’s time to dust off your collection of soup recipes and admit that full on grilling season (at least in Chicago) is pretty much over.

Around here, the first time the high only made it to 60, my wife was already asking about the great one, Beef Burgundy, as well as classics like Butternut Squash Soup.

I’ve taken a look in the archives and picked my 4 favorite soups from over the years.

Pressure Cooker Ham, Lentil and Vegetable Soup

Split Pea and Ham is a classic in many ways.  Here I’ve significantly cut down cooking time with a pressure cooker, and amped it up by using homemade ham stock….

Red Lentil and Quinoa Soup

A very satisfying vegetarian soup made with a couple of powerhouses – lentils and quinoa.

Butternut Squash and Apple Soup

Sure, it’s rather pedestrian to make a butternut squash soup….but I think the apple gives it a little something different.

Roasted Carrot and Malbec Soup

This was one of my first real attempts at developing my own recipe, and did so trying to recreate an amazing soup that we had while staying at a winery in Argentina.  It’s a really delicious soup!
