Garlic Bread with Cheddar and Parmesan

There are two great things about day old baguette.  One is croutons.  The other….garlic bread.  It’s stupid easy and will make you wonder why you ever bought something like this pre-made and frozen.

For every foot of baguette, you’ll need 2 Tablespoons of butter and 1 Tablespoon of olive oil.  Add to that lots of garlic and a pinch of salt.  Melt the butter and mix in the oil, garlic and salt.If you have parsley or basil on hand, mince some and mix it in as well.

Wrap the bread up in foil and bake for 15 minutes at 400 degrees.  Go for 20-25 if you like it crispier.

Carefully open the packet up and top with cheddar cheese and parmesan.  Set your oven to broil and very carefully melt the cheese and brown the sides.
